Introducing… Muffins without the muffin top.
Try 3 freakin delicious protein muffin recipes and remove any excuses you might have for not staying on track. They taste delicious, easy to make AND even easier to throw in your bag to take as a snack later. Trust us, you won’t wanna share!
Peanut Butter Banana Protein Muffins
INGREDIENTS
- 2 cups - white whole wheat or all-purpose flour
- 1/4 cups - Vanilla Flat Tummy Shakes (or chocolate if you wanna mix it up)
- 2 tsp - baking soda
- 1 tsp - cinnamon
- 1/2 tsp - baking powder
- ¼ tsp - salt
- 1 1/2 cups - mashed ripe bananas
- 1/4 cups - melted coconut oil
- 1/2 cups - creamy peanut butter
- 1/2 cups - honey
- 2 - eggs
- 3/4 cups - Probiotic Milk
- 1/3 cups - flaked coconut
INSTRUCTIONS
Preheat oven to 375°. Grease muffin tray, or line with cupcake liners. In a large bowl, whisk flour, protein powder, baking soda, cinnamon, baking powder, and salt. Put aside. In a separate large bowl, whisk bananas, peanut butter, honey, coconut oil, and eggs until well combined. Then, stir in milk. Add all wet ingredients to dry ingredients and stir until just combined. Pour batter into muffin tray. Sprinkle flaked coconut on top. Bake 15-20 minutes. Test with a toothpick.
Double Chocolate Protein Muffins
INGREDIENTS
- 2 cups- rolled oats divided
- 1 cup - Chocolate Flat Tummy Shakes
- 2 - mashed bananas (large)
- 2 - eggs
- 1 cup - almond milk
- 1/3 cup - cacao powder
- 2 tbsp - maple syrup
- 1/2 tsp - baking powder
- 1/3 cup - chocolate chips
DIRECTIONS
Preheat oven to 350°F and grease muffin tray, or line with cupcake liners. Mix 1 cup rolled oats into a fine flour using a food processor. Pour into a large mixing bowl and add the rest of the ingredients and stir well. Divide the batter into muffin tray and bake for 15-20 minutes.
Strawberry Chocolate Chip Protein Muffins
INGREDIENTS
- 1 cup - oat flour
- 1/4 cup - Strawberry Flat Tummy Shakes
- 1 tbsp - lemon juice
- Zest of ½ a lemon
- 2 tbsp - stevia baking blend
- ½ tsp - baking soda
- 1 Pinch - sea salt
- 1 Pinch - cinnamon
- 1 tbsp - coconut oil
- 3/4 cup - egg whites
- 2 tbsp - unsweetened vanilla almond milk
- ½ cup - vanilla non-fat Greek yogurt
- 1 tsp - vanilla extract
- ½ cup - chopped strawberries
- 1/4 cup - mini chocolate chips
DIRECTIONS
Preheat oven to 350°F and grease muffin tray, or line with cupcake liners. Then, mix all dry ingredients together (minus chocolate chips). Then, add in all the wet ingredients and stir until blended. Lightly stir in strawberries and chocolate chips. Divide the batter into muffin tray and drop 3-5 mini chocolate chips on each muffin. Bake for 23-25 minutes. Test with a toothpick.
